Did you know you can regrow green onions? After you cut off the green tops, just stick them in a glass of water or soil and let them regrow in sunlight on a windowsill or table.

Last September, right before I left for an extended time away, I stuck a bunch of green onions in the raised garden beds of our backyard. My boyfriend and landlady both ignored them over the winter. When I got back in July, they were harvest ready!

They flowered (we let the flowers dry out and harvested the seeds by shaking them out) and the bulbs were shallot sized. I used some bulbs as I would regular onions in dishes, and cut back the flower stalks to let new ones grow from other bulbs.
